Zucchini noodles are a foodie’s best friend. They’re the perfect pasta substitute for anyone who doesn’t want to overdo it with carbs, and they’re super easy to make. With a mandoline or a spiral slicer, secure the zucchini on prongs and push the veggie toward the blades. A smaller and less expensive option is a julienne peeler, which has a serrated blade to create thin strips. You can also buy them precut in stores, but there’s something satisfying about slicing your own zoodles.
